I was lucky enough to receive a pretty brilliant book from the VEGG people.  Do you know about Vegg?
It's a plant based egg yolk re-placer.  Seriously, it's what I've been missing when it comes to vegan baking and cooking.  It's a powder and you add water or milk, it's as easy as that!  I've been doing some experiments and had great results.

Cake anyone?

I already had in a cake mix (one of those cheap ones that you're meant to add your own bits too) and used vegg instead of my usual egg re-placer.  (Sometimes I use vegetable oil for cakes).

All in all.... the cakes went down well.  I'm so pleased with Vegg, THANK YOU!  I've made them a couple of times now, a bit of experimenting is needed, but you get a lot to work with in the packet. 
I can't wait to work my way through the rest of the book.  A couple of days ago we had a go at the pancakes, WOW WOW WOW!  Soooo good.  Who says pancakes are just for pancake day?  Stupid idea really.
